Fiesta Chicken

5-7 chicken breasts
1/3 cup flour
1 tsp garlic salt
1 tsp lemon pepper
1 tsp chili powder
2 tbsp margarine
2 tbsp olive oil
1/ cup jalapeno jelly
1 lime

In Ziploc bag, mix together flour, garlic salt, lemon pepper, and chili
powder. Add
chicken pieces and shake to coat. In large fry pan (I use my electric
skillet),
place margarine and oil and heat over medium temperature (350°). Add
chicken and cook,
turning, about 10 minutes or until brown on all sides. Reduce heat,
cover, and cook
about 5 minutes. Remove cover and cook about 5 minutes more or until fork
can be
inserted in chicken with ease. Remove chicken from pan onto a
foil-covered cookie
sheet with sides on it. With meaty side up, cut 3 or 4 diagonal cuts into
chicken.
Spread jalapeno jelly evenly over the chicken. Bake at 400° about 5
minutes or until
jelly melts. Squeeze juice from 1/2 lime over chicken. YUMMY!!

The coating on the chicken is just a light breading,
