Homemade Spaghetti Sauce

2 TBS olive oil
2 C chopped onion
2 cloves chopped garlic

Heat oil in sauce pan-add onion and garlic and cook over medium heat until transparent.

5 C tomatoes (I usually use roma or regular sandwich tomatoes-or two 28 oz.cans-drained)
1 tsp dried basil
1 tsp dried tarragon
2 tsp dried oregano
2 tsp salt
1 TBS brown sugar
6 0z can tomato paste
pepper

To onion and garlic mixture add tomatoes, herbs, salt, sugar, tomato paste, and pepper. Stir all of the ingredients together and simmer gently for at least 40 minutes--do not let boil.

If you like a smooth sauce, you may put it through a food mill or blend in an electric blender after it has cooled.

Cheese sauce

2 tbsp butter
2 tbsp flour
1 cup milk
1/2 cup grated sharp cheddar cheese
season salt

Melt butter on low to medium heat. Add flout to butter and then whisk milk in slowly. Stir until it boils, keep stirring until it thickens. Turn off heat; add cheddar cheese and some season salt.

BBQ Sauce

1 bottle bbq sauce
1 cup ketchup
1 tbsp liquid smoke
3 tbsp Worcestershire sauce
2 gloves garlic
1/4 cup wine vinegar
1/3 cup brown sugar

Combine all ingredients

Teriyaki Sauce

1 cup soy sauce
5 tbsp. sugar
2 cloves garlic crushed
1 small piece of ginger crushed
5 tbsp ketchup (more if you want a thicker sauce)
2 tbsp sake or sherry wine

Place all ingredients into a blender and blend until well combined.

Pina Colada Dipping Sauce

4 oz. liquid pina colada mix
3 oz. sour cream
3 oz. crushed pineapple, drained

Mix ingredients together. Great for coconut shrimp
